These easy rotisserie chicken sandwiches are no-cook, delicious, and a great alternative to ordering out. These sandwiches are easy to make and make a great grab-and-go meal from the grocery store or a great way to use up that leftover rotisserie chicken or any leftover chicken you may have. I know you will love it as much as we do!
This rotisserie chicken sandwich is a no-cook, easy chicken sandwich that anyone can make. This easy chicken sandwich only requires a few ingredients from the grocery store.
It is my go-to quick dinner (I know I have lots but this is a favorite!) and my whole family loves it.
The main ingredient in this recipe, the rotisserie chicken, is picked up at the store making this really easy. For me, rotisserie chicken makes meals so much easier and it makes for quick weeknight meals.
This meal is assembled in just minutes and it is so filling and satisfying.
Ingredients
- Store-bought rotisserie chicken (or leftover rotisserie chicken meat). If I have time, I love making a batch of Dutch oven shredded chicken for this meal.
- Goat cheese: This is the spread on the sandwich.
- Fresh baguette: Make sure it is fresh so it is easy to bite into.
- Arugula: Topping for the chicken.
- Dressing (olive oil, dijon, rice wine vinegar, water).
- Kosher salt.
All of these ingredients are items that you can easily pick up at the grocery store. Once you have picked up these items from the store, there is no cooking involved, just assembly.
It really is so simple!
PRO-TIP:
If you want to skip making your own dressing, just look for dijon vinaigrette in the store while you are picking up your other ingredients.
How To Make These Rotisserie Chicken Sandwiches
There are not many steps to make these easy chicken sandwiches. The name of the game here is assembling everything.
- Make the dressing: The first thing you want to do is make a simple Dijon dressing for the sandwiches. This is just adding all of the ingredients for the dijon dressing into a bowl and whisking.
- Toss Dressing with Arugula: After you make the dressing, add the arugula to the bowl and toss that well. This is the delicious flavor that sits on top of the rotisserie chicken.
- Add goat cheese and rotisserie chicken: Slice the baguette and spread the softened goat cheese over the bottom side then add shredded rotisserie chicken over that.
- Add arugula: The very last step is topping the chicken with the dijon and arugula salad mix and placing the top of the bread over that.
I told you this was very simple. Even though this chicken sandwich is easy, it is really big on flavor.
Tips
- Make sure you are using the freshest baguette you can find, preferably bought the same day you are ready to make this. You do not want the sandwich to be too tough.
- Depending on where you live, rotisserie chicken can sell out fast, usually in the morning. If you know this is the case or are not sure, you can purchase the rotisserie chicken in the morning and refrigerate it until dinner.
- If you want to use leftover chicken for this recipe instead of rotisserie chicken, just finely shred the leftover chicken with two forks and use it in place of the rotisserie chicken.
- Sometimes it is nice to give a little more attention to the presentation of our food by dressing it up a bit. I like cutting sheets of parchment paper to cover the middle half of the baguettes.
Storing and Reheating
To reheat: Wrap the chicken in aluminum foil (make sure to pour the juices over the meat) and place it in a preheated oven at 350 degrees for about 15-20 minutes until warmed through. You can make these rotisserie chicken sandwiches without re-heating the chicken as well.
To store: Wrap the assembled sandwiches in aluminum foil or parchment paper and place them in the fridge for up to 2 days.

Rotisserie Chicken Sandwiches
A delicious no cook sandwich made with store bought rotisserie chicken and delicious add ins.

Ingredients
- 2 fresh baguettes cut in half, making four smaller baguettes
- 2 cups rotisserie chicken meat shredded coarsely. I prefer mostly white meat but you can mix the dark meat and light meat based on your preference.
- 4 ounces Arugula cleaned and rinsed4
- 4 ounces Goat cheese room temperature. Try to let it sit for at least 15 minutes on the counter top to soften.
Dreessing
- 4 tablespoon olive oil
- 1 ½ tablespoon dijon mustard
- 1 ½ tablespoon seasoned rice wine vinegar you can substitute apple cider vinegar plus ¼ teaspoon sugar for the rice wine vinegar
- 1 tablespoon water to thin the dreessing a bit.
- ½ teaspoon kosher salt
Instructions
In a medium bowl combine the ingredients for the dresesing and mix well.
4 tablespoon olive oil, 1 ½ tablespoon dijon mustard, 1 ½ tablespoon seasoned rice wine vinegar, ½ teaspoon kosher salt, 1 tablespoon water
Add the arugula and tosss it in the dressing.

Set aside.
Place the goat cheese into a small bowl and give it a good mash and mix it well so it will be easy to spread.

Grab the baguettes you cut in half to make 4 sandwiches.
2 fresh baguettes
Now cut them in half length wise to open up the baguette.
Spread ¼ of the goat cheese on one half of each of the baguette sandwiches.
Place ¼ of the shredded chicken over top of thee goat cheese.
2 cups rotisserie chicken meat
Place ¼ of the arugua mixture on top of the chicken.
Place the tops on to the baguettes.
Serve immediately.
